recipe: cake pops

Making the Cake
You will need:
  • Cake Mix (I used Funfetti)
  • 1 cup Water
  • 1/2 cup Vegetable Oil
  • 3 Eggs
Directions:
  1. Bake the cake according to directions on the box
  2. Let the cake cool for 15 minutes
  3. Once cool, cut off the edges of the cake as well as a thin layer on top and bottom
    1. this will ensure that the cake pops are as soft as possible

Rolling the Balls
You will need:
  • Cake
  • Vanilla Frosting
  • Large Bowl
  • Flat Cookie Sheet
  • Small Spoon
Directions:
  1. Crumble cake into large bowl
  2. Add half of the container of frosting to the crumbled cake & mix together with your hands
  3. Once cake and frosting are completely mixed, begin making little balls
    1. Use your hands to round out the cake balls (make sure there are no cracks in the balls)
  4. Place the cake balls onto the cookie sheet
  5. Cover cookie sheet with tin foil
  6. Refrigerate cake balls for at least 2 hours

Dipping and Decorating

You will need:

  • Chilled Cake Balls
  • 2 bags of Candy Melts
  • Microwave Safe Mug/Cup
  • Spoon
  • Lollipop Sticks
  • Sprinkles
  • Foam Block (cover with tinfoil)
Directions:
  1. Melt a small amount of Candy Melts (follow melting directions on bag)
  2. Dip the end of the lollipop stick into the melted candy
  3. Push the melted candy end of the stick into the middle of the cake pop (go about halfway in)
  4. Once all of the cake balls have sticks in them, place cookie sheet back in the refrigerator for 5 minutes
  5. Melt the remainder of your Candy Melts in the same microwave safe mug/cup right before you take the cake balls out of the refrigerator (the Candy Melts harden very quick)
  6. Dip the cake pops (one at a time) straight into the melted candy until it is fully covered
  7. Pull the cake pop out of the melted candy and hold the stick sideways
    1. At this point I like to LIGHTLY tap the end of the stick with my finger to help any access candy that will weigh the pop down, drip off the pop
  8. Quickly sprinkle top of cake pop with sprinkles
  9. Place stick into your foam to allow it to dry for a few minutes
  10. ENJOY!

peace love & no pants

It is absolutely beautiful out today! I have been waiting to wear this dress for a few months now - and my legs have finally seen the light of day. Spring has officially sprung in my book (you better not decide to snow tomorrow, Mother Nature!) I have been slacking on the blogging front again.  I have been feeling a bit lazy getting ready in the mornings; with everything going on work and wedding-wise I feel exhausted. This weekend is my bridal shower & bachelorette party so the wedding is finally starting to feel real! We have been in full force planning mode the past few weeks buttoning up the last details.  I cannot wait to see how everything comes together.
